1 large free range chicken (about 5 pounds), quartered
1 cup diced onion
1/2 cup diced green pepper
1/2 cup diced celery
1 (15-ounce) can diced tomatoes
1 quart chicken stock
2 1/2 teaspoons salt, divided
1 teaspoon dried Mexican oregano
1/2 teaspoon ground coriander
1/2 teaspoon freshly ground black pepper
1/2 cup golden raisins
1/4 cup capers , drained
1/2 cup sliced Spanish green olives
1/4 cup toasted pine nuts
3 cups masa harina (not instant masa)
2 cups lard
3 cups chicken broth
2 pounds banana leaves
Fried plantain strips, sliced lengthwise, for service, optional
