4 fresh salmon filets, about 4 ounces each
2 tsp freshly grated ginger or ginger paste
1 clove garlic, shaved
1 green onion, trimmed and sliced on the bias
¼ cup reduced sodium soy sauce
¼ cup rice wine vinegar
2 Tbl brown sugar
1 Tbl cold water
1 Tbl corn starch
1 fresh lime cut into 4 wedges for garnish

Cook salmon filets- can be baked or grilled or pan seared until desired doneness. About 4 minutes per side for pan seared or about 15 minutes in the oven at 350-degrees.

Sweat the ginger and garlic in a small sauce pot, add soy, vinegar and sugar and bring to a boil. Simmer about 5 minutes.

Mix cornstarch and water and stir into sauce. Let thicken.

Add green onion and serve immediately.

Plate the salmon, squeeze ¼ lime wedge over it and glaze with ¼ of the sauce for each salmon filet.
