Chicken Lettuce Wraps

1 Tbsp olive oil
1 lb ground chicken
1 small yellow onion, diced
2 garlic cloves, minced
2 tsp grated fresh ginger
1/4 cup hoisin
2 Tbsp reduced-sodium soy sauce
2 Tbsp water
1 1/2 Tbsp rice wine vinegar
1 tsp toasted sesame oil
1 Tbsp sriracha or gochujang
1 (8-oz) can water chestnuts, drained & diced
1/4 cup chopped green onion
1 head butter lettuce or romaine hearts

Whisk together the sauce ingredients: hoisin, soy sauce, water, rice wine vinegar, toasted sesame oil, and sriracha or gochujang.

Heat olive oil in a large cast iron skillet over medium heat.

Add diced onion and sauté until translucent.

Add minced garlic and grated ginger, and sauté until fragrant.

Add ground chicken to the skillet and cook until browned.

Pour in the sauce and stir to combine, allowing the mixture to thicken.

Add diced water chestnuts and chopped green onion, mixing well.

Prepare lettuce cups by separating the leaves of butter lettuce or romaine hearts.

Serve the chicken filling in the lettuce cups, garnished with additional green onion.
