Chicken Lettuce Wraps

1 tablespoon sesame oil
1 pound ground chicken
1/2 large onion, chopped
hoisin sauce
low sodium soy sauce
rice wine vinegar
Asian garlic chili sauce
celery (substituted for bamboo shoots)
fresh ginger
minced garlic
chopped green onion
salt
pepper
1/4 cup peanut butter
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
2 tablespoons honey
1/8 teaspoon ginger

Heat a large sauté pan over medium heat.

Add 1 tablespoon of oil and 1 tablespoon of sesame oil to the pan.

Add 1 pound of ground chicken to the pan and cook until no longer pink.

Add 1/2 large onion, chopped, to the pan.

Stir in hoisin sauce, low sodium soy sauce, and rice wine vinegar.

Add Asian garlic chili sauce (or Sriracha) to taste.

Substitute bamboo shoots with chopped celery for crunch.

Add fresh ginger and minced garlic to the mixture.

Season with salt and pepper to taste.

In a separate bowl, prepare the peanut sauce by whisking together 1/4 cup of peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of rice wine vinegar, 2 tablespoons of honey, and 1/8 teaspoon of ginger until smooth.
