¼ cup creamy peanut butter
1 Tbsp rice vinegar
1 tsp sesame oil
2 Tbsp soy sauce
2 Tbsp sugar
1 tsp red pepper flakes
¼ cup water
16 butter lettuce cups
1½ lbs ground chicken
1 tsp salt
1 medium onion, diced
1½ cups mushrooms, sliced
3 Tbsp minced garlic
1½ tsp fresh minced ginger
1 Tbsp cornstarch, dissolved in 2 Tbsp water
3 Tbsp low-sodium soy sauce
1½ Tbsp red wine vinegar
½ tsp red pepper flakes
¾ cup shredded carrots
3 green onions, sliced

In a bowl, combine the creamy peanut butter, rice vinegar, sesame oil, soy sauce, sugar, red pepper flakes, and water to make the sauce.

In a large skillet, heat some oil over medium heat and sauté the diced onion until translucent.

Add the ground chicken to the skillet and cook until browned.

Stir in the sliced mushrooms, minced garlic, and fresh minced ginger; cook until the mushrooms are tender.

Dissolve the cornstarch in water and add it to the skillet along with the low-sodium soy sauce, red wine vinegar, and red pepper flakes; mix well.

Add the shredded carrots and sliced green onions, and stir to combine.

Serve the chicken mixture in butter lettuce cups with the peanut sauce.
