Spinach and Artichoke Dip

2 tablespoons avocado oil
1 cup gruyere cheese, shredded
1 cup organic cream cheese, softened
1/2 cup organic sour cream
1/2 cup avocado mayo
2 cups fresh spinach, chopped
1 can (14 oz) artichoke hearts, drained and chopped
2 cloves garlic, minced
1 cup shredded cheese

Spray a small baking dish with avocado oil or compliant butter/ghee.

Add half a cup of gruyere cheese (or parmigiano-reggiano or any compliant cheese).

Add half a cup of organic cream cheese that has been sitting out at room temperature.

Add half a cup of organic sour cream.

Add a quarter cup of avocado mayo (instead of regular mayonnaise).

Add one cup of chopped spinach (fresh or frozen).

Add a can of chopped artichoke hearts, making sure to drain them.

Add one clove of garlic (grated or pressed).

Mix all the ingredients together.

Scoop the mixture into the small baking dish and spread it out evenly.

Top with about a quarter cup of shredded cheese (gruyere or compliant cheese).

Bake in the oven at 350 degrees for 30 to 35 minutes until the top is nice and brown.
