Baigan Bharta

2 brinjals (500 grams)
1/2 tsp cumin seeds
1-2 pinch asafoetida
1/4 tsp turmeric powder
1 tsp coriander powder
less than 1/4 tsp red chili powder
salt (1/2 tsp or to taste)
1 inch piece ginger (grated)
1-2 green chilies (finely chopped)
less than 1/4 tsp garam masala
2-3 tbsp oil
1-2 tbsp green coriander (finely chopped)
2 tomatoes (finely chopped)

Roast the brinjals: make 3-4 slits in each brinjal to prevent bursting.

Place one brinjal in the microwave and roast for 5 minutes, then check and roast for an additional 2 minutes.

For the second brinjal, turn on the gas to the lowest flame and roast it directly on the flame, flipping it until tender (about 5-6 minutes).

Check the tenderness of the brinjal by pressing it.

After roasting, peel the brinjals and cut off the stalks.

In a preheated pan, add 2 tbsp of oil.

Once the oil is hot, add asafoetida and cumin seeds and sauté for a while.

Add turmeric powder, coriander powder, grated ginger, chopped green chilies, and chopped tomatoes to the pan and mix well.

Add salt and red chili powder, cover the pan, and cook for 2-3 minutes until the tomatoes become tender.

Cut the roasted brinjals into pieces with a knife.

Once the tomatoes are tender, cook the masala for 1-2 more minutes.

Mix the cut brinjals into the tomato masala and combine all ingredients.

Cook for an additional 2-3 minutes.

Add garam masala, cover the pan, and cook on low flame for 2 minutes to allow spices to absorb into the brinjals.

Add finely chopped green coriander into the baingan bharta before serving.
