Instructions

  • 1 cup semolina (rava)
  • 1/2 cup yogurt
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup chopped onions
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped coriander leaves
  • 1-2 green chilies, finely chopped
  • 2 tbsp oil for cooking

Instructions

  1. 1In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a smooth batter.
  2. 2Add salt and baking soda to the batter and mix again. Let it rest for 10-15 minutes.
  3. 3Heat a non-stick pan or griddle over medium heat and add a little oil.
  4. 4Pour a ladleful of the batter onto the pan and spread it into a thick circle.
  5. 5Sprinkle chopped onions, tomatoes, bell peppers, coriander leaves, and green chilies on top of the batter.
  6. 6Drizzle a little oil around the edges and cook until the bottom is golden brown, about 3-4 minutes.
  7. 7Flip the uttapam and cook the other side for another 2-3 minutes until golden brown.
  8. 8Remove from the pan and repeat the process with the remaining batter, adding more oil as needed.
