Instructions
- 1Mix semolina, yogurt, and water in a bowl until smooth.
- 2Let the batter rest for 30 minutes to thicken.
- 3Chop onion, tomato, green chili, and ginger finely.
- 4Add chopped vegetables and salt to the batter; mix well.
- 5Heat oil in a non-stick skillet over medium heat.
- 6Add mustard seeds and cumin seeds; sauté until they splutter.
- 7Pour a ladleful of batter onto the skillet, spreading it into a thick circle.
- 8Cook for 3-4 minutes until the bottom is golden brown.
- 9Flip the uttapam and cook for another 2-3 minutes until cooked through.
- 10Repeat with remaining batter, adding oil as needed.
- 11Serve hot with chutney and sambar.

- ●2 tbsp oil for cooking
Instructions
- 1In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a smooth batter.
- 2Add salt and baking soda to the batter and mix again. Let it rest for 10-15 minutes.
- 3Heat a non-stick pan or griddle over medium heat and add a little oil.
- 4Pour a ladleful of the batter onto the pan and spread it into a thick circle.
- 5Sprinkle chopped onions, tomatoes, bell peppers, coriander leaves, and green chilies on top of the batter.
- 6Drizzle a little oil around the edges and cook until the bottom is golden brown, about 3-4 minutes.
- 7Flip the uttapam and cook the other side for another 2-3 minutes until golden brown.
- 8Remove from the pan and repeat the process with the remaining batter, adding more oil as needed.
- 9Serve hot with coconut chutney or sambar.
