1 cup raw rice
1 tbsp ghee

Heat 2 tbsp of oil in a pressure cooker.

Add 1 tsp of chana dal, 1 tsp of uru dal, 1 tsp of peppercorns, 1 tsp of mustard seeds, and 1 tsp of cumin seeds; roast until golden brown and aromatic.

Add 3 medium sized onions thinly sliced, 4-5 slightly pounded garlic cloves, 4 slit green chillies, and a handful of fresh curry leaves; sauté for about 2 minutes until fragrant.

Add 3/4 cup of soaked black-eyed peas to the sautéed onions and mix well.

Add 1 tsp of salt, 1/2 tsp of turmeric powder, 1.5 tsp of red chilli powder, and 1 tsp of cumin powder; mix thoroughly.

Add 3 medium sized tomatoes finely chopped; cook until soft and mushy.

Pour in 3 cups of water and bring to a rolling boil.

Wash 1 cup of raw rice 3-4 times and soak for an hour.

Once the water is boiling, add the soaked rice and mix everything together.

Adjust the salt if needed, then add 1 tbsp of ghee and a generous handful of freshly chopped coriander leaves; stir well.

Close the pressure cooker, place the weight, and cook for about 2 whistles.

Switch off the stove and allow the pressure to release naturally.

Open the cooker and check the rice.
