Wash 250 grams of broad beans thoroughly and set aside.
Turn on the gas and heat a kadhai (wok).
Once the kadhai is hot, add oil and let it heat up.
Add chopped onions to the hot oil and sauté until they are golden brown.
Add diced potatoes and cook on high flame, stirring occasionally.
Add salt to taste while cooking the potatoes.
Add two chopped tomatoes to the mixture and stir well.
Incorporate minced garlic and sauté for a couple of minutes.
Sprinkle in half a teaspoon of turmeric, one teaspoon of red chili powder, and half a teaspoon of coriander powder; mix well.
Add water to the mixture to help cook the broad beans and stir everything together.
Cover and let it cook for a few minutes until the beans are tender.
Check for doneness and adjust seasoning if necessary.
Serve hot with rice.
