Chocolate Pudding

whipped cream or coconut whipped cream (optional)

Finely chop good quality dark chocolate (70% cocoa content).

In a medium saucepan, add 2 tablespoons of raw cacao powder or cocoa powder, coconut sugar or regular sugar, cornstarch, and salt. Whisk together until evenly combined.

Add 2 cups of milk (whole milk, 2% milk, or canned coconut milk for dairy-free) to the mixture and whisk together.

Put the pot over medium heat and cook the pudding, whisking constantly until it comes to a full boil.

Reduce the heat to a simmer and let it cook for about 30 seconds longer.

Remove the pot from heat and stir in vanilla extract and the chopped dark chocolate. Whisk until the chocolate is completely melted and the pudding is satiny smooth.

Pour the pudding into a bowl or individual serving cups and cover with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming.

Refrigerate the pudding for at least 45 minutes or up to four days to chill and thicken.

After chilling, give the pudding a good stir and spoon it into serving bowls or glass cups.

Optionally, dollop the pudding with fresh whipped cream and a sprinkle of shaved dark chocolate before serving.
