Chocolate Pudding

2 and 1/4 cups whole milk
2 tablespoons butter
1/4 cup unsweetened cocoa powder
3 tablespoons corn starch
1/4 teaspoon salt
1 tablespoon pure vanilla extract
2/3 cup sugar

In a 2 and 1/2 quart saucepan, add cocoa powder, sugar, corn starch, and salt. Whisk until well incorporated.

Slowly add whole milk while continuing to whisk.

Place the saucepan over medium heat and stir gently until the mixture comes to a boil.

Once it begins to bubble, continue stirring vigorously for 1 minute to cook out the corn starch.

Remove from heat and add vanilla and cubed butter, whisking until melted and incorporated.

Pour the pudding into serving dishes while hot.

To prevent a skin from forming, cover the pudding with plastic wrap directly on the surface.

Let the pudding cool for about 2 hours on a cooling rack or in the refrigerator.
