Chocolate Pudding

1/2 cup sugar (100 grams)
1/3 cup cocoa powder (33 grams)

Grab a medium pot and add half a cup of sugar (100 grams).

Add a third of a cup of cocoa powder (33 grams) to the pot.

Add two cups of whole milk (480 mils) to the pot and pop it over medium heat, stirring frequently until it gets steamy but does not boil.

In another large bowl, separate out two egg yolks and add two tablespoons of cornstarch to them.

Add a quarter cup of whole milk to the egg yolks and cornstarch, and whisk together.

Stir the pot occasionally to prevent sticking.

Once the milk mixture is steamy, take it off the heat and temper the egg mixture by slowly whisking in about a cup of the hot mixture.

Whisk vigorously while drizzling in the hot mixture to raise the temperature of the egg yolks without scrambling them.

Once tempered, whisk in the remaining hot cocoa mixture back into the pot.

Return the pot to the heat and whisk continuously until the mixture thickens and you see trails being dragged through by the whisk, indicating a pudding-like consistency.

Immediately take it off the heat once thickened and add two tablespoons of cubed butter, whisking until melted and smooth.

Add two teaspoons of vanilla extract and whisk to combine.

Transfer the pudding to a clean bowl and press plastic or parchment paper onto the surface to prevent a skin from forming.

Chill the pudding until set, then remove the covering and scoop into cups.

Top with whipped cream and shaved chocolate if desired.
