3/4 cup (150g) granulated white sugar
4 tbsp (55g) butter, melted
3 large eggs at room temperature
a pinch of salt
2 tsp (10ml) pure vanilla extract

Combine 1+1/4 cups (175g) all-purpose flour, 1 tbsp (15g) granulated white sugar, and 1/2 tsp (3g) salt in a mixing bowl and pulse a few times to combine.

Add 1/2 cup (113g) cold diced butter and pulse until coarse crumbs form.

Add 3 tbsp ice water, one at a time, pulsing until the pastry just starts to clump together.

Transfer the dough to a pastry mat, gather it into a ball, and form it into a disk. Cover with plastic wrap and refrigerate for 1 hour.

Dust with flour and roll the crust into a 12 inch (30cm) circle.

Lightly roll the dough around the rolling pin and carefully transfer it to a 9 inch (23cm) pie plate, unrolling it into the dish.

Gently press the dough down to line the pie dish, trim the overhang to 1 inch (2.5cm), fold the overhang under itself to form a rim, and flute the edges with your fingers.

Cover the pie crust and put it in the freezer to chill for 45-60 minutes.

In a mixing bowl, combine 1+1/2 cups (150g) coarsely chopped pecans, 1 cup (240ml) dark corn syrup, 3/4 cup (150g) granulated white sugar, 4 tbsp (55g) melted butter, 3 large eggs at room temperature, a pinch of salt, and 2 tsp (10ml) pure vanilla extract. Whisk until well combined.

Place the chilled pie crust on a baking sheet, add the chopped pecans, and pour the filling over the pecans.

Place additional pecan halves on top in a decorative pattern, if desired.

Bake in a preheated oven at 350°F (180°C) on the lower rack for about 50-55 minutes or until the filling is just set.

Check halfway through and tent a piece of aluminum foil over the pie if it is browning too quickly.
