Lightly toast 1 and 1/2 cups of chopped pecans in the oven for 5 to 7 minutes until fragrant and slightly browned.

Once the dough is formed, shape it into a disc, wrap it in plastic, and refrigerate for about 20 minutes to relax the gluten and firm up the butter.

Brown 4 tablespoons of unsalted butter in a stainless steel pot over medium heat, monitoring the color until it reaches a dark caramel color before removing it from the heat.
