Jamaican BBQ Pork
Cultural Context
Jamaican BBQ Pork, often referred to as Jerk Pork, has its roots in the indigenous Taino people and was later influenced by African cooking techniques. Traditionally, the pork is marinated with a blend of spices and herbs, then grilled to perfection, making it a staple at gatherings and celebrations. The dish is celebrated for its bold flavors and is enjoyed not just in Jamaica but across the Caribbean and beyond, with variations adapting to local ingredients and tastes.

Jalapeños provide heat with a milder flavor.

Pork butt is often less expensive and still flavorful.
Put on 1 teaspoon of herb seasoning.
Add 1 large spoon of paprika.
Sprinkle in coasting pepper.
Add 1 teaspoon of pork seasoning.
Add 1 teaspoon of curry garlic and coriander seasoning.
Drizzle in some oil and mix.
Put on gloves and marinate the pork.
Let the pork marinate for roughly 1 hour.
Preheat the grill until really hot.
Place the marinated pork on the grill.
Grill the pork on both sides until cooked.
Turn off the stove after grilling.
In a bowl, add a little bit of brown sugar.
Add roughly 1/2 cup of ketchup to the bowl.
Add roughly 1 teaspoon of browning for color.
Add mixed herbs for flavor.
Add a couple of tablespoons of honey and whisk together.
Prepare grease paper and place pork on it.
Rub barbecue sauce on one side of the pork.
Turn the pork over and rub sauce on the other side.
Preheat the oven to gas mark 6 or 7 or 175°C.
Place the pork in the oven for half an hour.
Remove the pork from the oven after half an hour.
