1 cup pumpkin, diced
2 medium carrots, sliced
1 cup potatoes, diced
1 cup okra, sliced
1 medium onion, sliced
1 medium bell pepper, sliced
1 scotch bonnet pepper, sliced
2 sprigs thyme
3 cloves garlic, minced
2 cups water
2 tablespoons butter
1 teaspoon pimento seed
2 scallions, chopped

Trim the fins and tails of the fish and slice both sides twice to allow flavors to penetrate.
