4 Sockeye Salmon Fillets
1 Tbls Meridian olive oil
2 garlic cloves minced
1-2 Tbls capers
1 lemon
fresh parsley & thyme chopped
salt & pepper to taste
arugula Lettuce
1 lb rainbow carrots peeled and sliced
1 lb fingerling potatoes sliced in half
2 Tbls Meridian olive oil
1/4 cup melted butter
1/2 tsp sugar

Preheat oven to 400F.

Place carrots and potatoes on a parchment lined baking sheet and add olive oil.

Drizzle with melted butter.

Season carrots with sugar and season carrots and potatoes with salt and pepper to taste. Sprinkle with fresh herbs.

Place carrots and potatoes in oven. Set timer for 15 minutes.

Line baking sheet with parchment and add salmon fillets.

Drizzle each salmon fillet with olive oil and spread it around.

Sprinkle garlic, fresh herbs and salt & pepper on each fillet. Add capers.

Drizzle with lemon juice from 1/2 the lemon slice the other half, add lemon slices to top of salmon.

When the timer goes off add salmon to the oven and cook for 12-15 minutes until salmon reaches 140F.

Remove and serve salmon over arugula with your carrots and potatoes, sprinkle with more fresh herbs and Enjoy!
