Chop cauliflower into tiny pieces and add 1/2 cup of broccoli.

Microwave the chopped cauliflower and broccoli covered for 1-2 minutes with a little water to steam.

Prepare the green chutney by blending together mint leaves, 1 cup coriander leaves, 1 green chili, a couple of garlic cloves, 1/4 teaspoon cumin seeds, 1/2 teaspoon salt, and the juice of 1 1/2 limes.

Make the date chutney by blending 1 heaped cup of mulberries with 2 teaspoons of water, less than 1 teaspoon of stevia powder, 1/4 teaspoon of salt, 1 tablespoon of tamarind pulp, 1/4 teaspoon of cumin powder, and 1/4 teaspoon of chili powder. Reduce until drier, then add 1/8 teaspoon of xanthan gum.

Mix the cooked cauliflower and broccoli with 1/3 cup of dry mozzarella, 1/2 teaspoon of fennel seed powder, 1/2 teaspoon of cumin seed powder, 1/2 teaspoon of coriander powder, 1/4 teaspoon of amchur powder, red chili powder, and a pinch of garam masala. Add 1/4 teaspoon of salt.

Add 2 teaspoons of psyllium husk powder to the mixture while it's hot and let it rest for 5 minutes to absorb moisture.

Form the tikki by using a ring mold: layer some of the cauliflower and broccoli mixture, add filling in the center, and cover with more mixture. Repeat to make additional tikkis.

Heat olive oil in a cast iron pan and fry the tikkis until golden brown, flipping them and pressing down to make them crunchy.

Prepare a yogurt mixture with salt and yogurt, and place it at the bottom of the serving dish. Add the fried tikkis on top.

Assemble the chaat by topping with yogurt mixture, sweet chutney, spicy chutney, chaat masala, coriander, and any additional toppings like lime juice and chili powder.
