Welcome to the video and introduce the recipe for caramel filled chocolates.
Use a silicone mold for the chocolates, which costs about eight dollars on Amazon.
Fill each cavity of the mold with dark chocolate to the top and tap the mold to remove air bubbles.
Flip the mold over to let excess chocolate drip out.
Use a large spatula to clean off the edge of the mold and place it upside down on a silicone sheet.
Let the chocolate sit for about 10 minutes, then flip it back over and leave it for about 30 minutes until the inside has set.
Prepare homemade caramel in a piping bag for easy filling.
Fill each cavity with caramel, leaving a little space at the top, and tap the mold to level the caramel.
Add another layer of dark chocolate to fill each mold to the top and tap again to even it out.
Place the mold in the fridge for about 10 minutes or leave it at room temperature for a couple of hours if using tempered chocolate.
To unmold, push on the bottom of the mold with your thumb to pop out the chocolates.
Cut into the chocolate to reveal the thin shell and homemade caramel inside.
