- 4Chop the bell peppers, onion, tomato, and spinach into small pieces.
- 5Add the chopped vegetables, pepperoni, and mozzarella cheese to the egg mixture.
- 6Stir in the basil and oregano until evenly distributed.
- 7Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
- 8Sprinkle grated parmesan cheese on top of each muffin.
- 9Bake in the preheated oven for 18-20 minutes, or until the muffins are set and lightly golden on top.
- 10Let the muffins cool for a few minutes before removing them from the tin.
- 11Serve warm or store in the refrigerator for meal prep.
