Heat olive oil in a skillet over medium heat until shimmering.
Season chicken breasts with salt, black pepper, and paprika.
Add chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown.
Remove chicken from skillet and set aside.
In the same skillet, add butter, garlic, and onion; sauté until fragrant, about 2-3 minutes.
Add bell pepper and mushrooms; cook until softened, about 4-5 minutes.
Pour in chicken broth and lemon juice; stir to combine.
Return chicken to the skillet, cover, and simmer for 10 minutes until cooked through.
Sprinkle with fresh parsley before serving.
Serve hot with your choice of sides.
