Heat a medium-sized skillet over medium heat and add 1 tbsp oil.
Once the oil is hot, add 1/2 tsp cumin seeds and 1/2 tsp powdered fennel seeds; allow them to splutter.
Add 1 tsp crushed ginger and 5 large garlic cloves roughly chopped; cook for about 1 minute.
Add 2 medium chopped tomatoes and cook for about 1 minute until they soften slightly.
Prepare asparagus by snapping off the tough ends and cutting the rest into bite-sized pieces, keeping the tips whole.
Add the asparagus to the skillet and mix well.
Add salt to taste, being careful as the asparagus will shrink while cooking.
Add red chili powder to taste; avoid using turmeric to retain the green color of the asparagus.
Cook uncovered for about 3-5 minutes until the asparagus is tender but still crunchy.
Turn off the stove and serve hot with chapatis.
