Use 200 grams of lentils, preferably red lentils for ease of use, and soak overnight if using thicker lentils.
Drain and rinse the lentils before adding 150 grams to the slow cooker.
Add 1 chopped onion, minced garlic, and grated ginger to the slow cooker.
Add 225 grams of lentils and 2 pints of water to the slow cooker.
Add 50 grams of quinoa and 200 ml of coconut milk for flavor.
Mix in 2 tablespoons of cumin (both seeds and powder), 1 tablespoon of chili flakes, 2 tablespoons of paprika, and fenugreek powder.
Add 2 pints of stock, adjusting water for desired soup consistency.
Cook on high for 3 hours or low for 6 hours in the slow cooker.
Stir and check that all lentils are cooked before serving, adjusting consistency with more water if needed.
Serve the lentil curry soup, which is packed full of protein.
