Cultural Context
Originating from Tanzania, Half Cakes are a beloved snack often enjoyed with tea or coffee. These delightful treats symbolize hospitality and are commonly served during gatherings and celebrations. Today, variations exist across East Africa, with each region adding its unique twist to the recipe.
Mix flour, sugar, baking powder, baking soda and salt in a suitable bowl.
Add Butter, Oil and Vanilla essence. Mix and make sure the oil is well mixed with the flour to get mixture of fine crumbs.
Add milk to the flour. And slowly mix to form a dough.
Knead the dough for about 5 minutes.
Cover the dough with a firm paper or damp cloth and allow to rest for 15 minutes.
Dust your working surface with flour and place the dough.
Roll the dough using rolling pin to spread the dough outward.
Cut into your desired shapes.
Heat oil for about 3 minutes on medium low heat.
Add your half cakes and cook them with the low heat.
The half cakes should not rise and there must be some bubbles on the edges.
When they rise up then you are going flip them over.
Cook until they are golden brown and turn over the other side to cook well.
Remove from heat and put them in a paper towel to drain excess oil.
Before adding the next batch, remove oil from heat or add some cold oil in.
