Originating from Tanzania, Half Cakes are a beloved snack often enjoyed with tea or coffee. These delightful treats symbolize hospitality and are commonly served during gatherings and celebrations. Today, variations exist across East Africa, with each region adding its unique twist to the recipe.
Add 2 large eggs to a bowl.
Add 1/2 cup of brown sugar to the bowl (white sugar can be used as an alternative).
Add 1/4 cup of cooking oil to the bowl.
Whisk the mixture until the sugar completely dissolves into the eggs.
Add 3 cups of all-purpose flour to the mixture.
Add 2 tbsp of baking powder (omit if using self-rising flour).
Mix everything gently using clean hands until the mixture becomes crumbly.
Add around 2 tbsp of water to the mixture and knead until it combines.
Sprinkle a little flour on the surface or board.
Roll out the dough, applying minimal pressure on the sides to ensure even thickness.
Cut out the edges of the rolled dough.
Cut the dough into small pieces and shape them into tiny squares.
Heat cooking oil in a pan over medium heat for deep frying.
Deep fry the half cakes, flipping them once they start turning color.
Continue flipping until all half cakes turn golden brown.
Ensure the oil is not too hot or too low to avoid greasy or undercooked half cakes.
Once cooked, remove the half cakes from the heat and drain excess oil by shaking them into a bowl or plate, optionally using a servet.
Repeat the frying process with the remaining dough until all half cakes are done.
