3 tbsp condensed milk

Prepare Ingredient B by beating unsalted butter and condensed milk using a stand mixer until light and fluffy for about 10 minutes. Set aside.

Prepare the batter by whisking eggs, egg yolks, caster sugar, and sponge gel at high speed until pale and fluffy for about 7-8 minutes. Sieve in self-rising flour and mixed spice, then mix at low speed until just combined. Gradually add butter in three batches, mixing well after each addition.

Preheat the oven to upper heat at 200°C for 20 minutes. Grease and line an 8-inch square cake pan with greaseproof paper. Transfer the greased pan into the oven for 1 minute to heat.

Bake the cake layer by layer, using a ladle to scoop and spread batter evenly onto the pan. Level the surface and prick holes with a fork. Scatter prunes over every fourth layer before baking. Bake each layer for about 5-6 minutes until cooked and browned, watching carefully to avoid burning.

For the last 2-3 layers, move the oven rack one level down and finish with scattered prunes on top. Set the oven to 180°C and bake for another 10 minutes before removing from the oven.
