Lamb Shank

1 sliced onion
3 cloves of diced garlic
1 celery stick sliced
1 carrot diced
1.5 cups of beef bone broth
1 cup of stout (e.g., Pirate Life stout)
2 tablespoons of tomato paste
Salt and pepper to taste

Brown the sliced onion in a pan.

Add the diced garlic and brown it off with the onion.

Add the sliced celery stick and soften it after the onion and garlic have been browned off.

Add the diced carrot in with the celery.

Pour in 1.5 cups of beef bone broth and 1 cup of stout, then stir in 2 tablespoons of tomato paste.

Season with salt and pepper to taste.

Bring the mixture to a simmer and stir.

Add the lamb shanks when they are ready for braising.
