Ghana Party Fried Pie

Originating from Ghana, Party Fried Pie, also known as Bofrot, is a beloved treat often enjoyed during celebrations and gatherings. Traditionally, these sweet, fried pastries are made with simple ingredients, reflecting the resourcefulness of home cooks. Today, they are popular not just in Ghana but across West Africa, with variations that include different fillings and toppings, making them a delightful snack for all occasions.

In a mixing bowl, measure 7 cups of all-purpose flour.
Add 1/2 teaspoon of salt and 1/2 teaspoon of baking powder to the flour and mix.
Add 4 tablespoons of margarine to the mixture and combine well.
Gradually add water to form a dough, mixing bit by bit to avoid making it too soft or too hard.
Roll out the dough with a rolling pin to your desired thickness.
Cut the dough into circles using a knife instead of a cutter.
Prepare the filling by frying diced onions and tuna together with pepper, ginger, garlic, and scallion in a pan.
Once the filling is ready, place it in the center of each dough circle.
Fold the dough over to create a half-moon shape and seal the edges using a fork.
Heat oil in a pan until hot, then fry the pies in batches until golden brown.
Remove the fried pies from the oil and let them drain on paper towels.
