Roll out 1/2 of the butter crust pastry dough to about an eighth of an inch thick, ideally forming a circle about 12 inches in diameter.
Transfer the rolled dough onto a parchment-lined sheet pan using a rolling pin.
Brush the outer edges of the dough lightly with water.
Roll up the edges of the dough to create a more uniform round shape and redistribute dough as needed for evenness.
Crimp the edge of the dough by pressing with one finger between two fingers of the other hand all around the tart.
Dock the crust with a fork to prevent bubbling during baking.
Bake the crust in a preheated oven at 375°F for 20 to 25 minutes or until golden brown.
Let the crust cool for about 10 minutes before preparing the cheese filling.
In a bowl, combine room temperature cream cheese, 2 tablespoons of creme fraiche or sour cream, 1 large egg yolk, sugar, a pinch of salt, vanilla extract, and lemon zest. Whisk until combined.
Transfer the cheese mixture into the pre-baked crust.
Return the tart to the oven at 375°F for another 20 minutes or until the cheese mixture is set and the crust is browned.
Allow the tart to cool completely before topping with strawberries.
Top the cooled tart with fresh strawberries, starting with the smaller ones on the outside, pointy side out.
Continue placing strawberries, leaning them against each other, until the surface is covered.
Quarter a few strawberries to fill in gaps between the larger ones.
Brush a thick, shiny glaze over the strawberries.
