1

Preheat the oven to 425 degrees Fahrenheit.

2

Season the hash browns with salt, smoked paprika, chili powder, and garlic powder, then toss to coat.

3

Spread the seasoned hash browns onto a large baking sheet and bake for about 25 minutes until golden and crispy.

4

Render 3-5 slices of bacon in a pan, then remove and set aside on a paper towel-lined tray.

5

In the same pan, add chopped breakfast sausage, diced green and red bell peppers, and a small diced onion. Season with salt and ground black pepper, and sauté for about 5-6 minutes until the peppers are tender and the sausage is cooked through.

6

Remove the sausage and pepper mixture from the pan and set aside in a separate bowl.

7

Melt 1.5 tablespoons of butter in the same pan over low heat, then add 4 large eggs and mix with a spatula.

8

Season the eggs with a pinch of salt and a sprinkling of black pepper, then add a few tablespoons of cream and continue to cook until scrambled.

9

To assemble the burritos, place homemade guacamole in the center of an extra-large flour tortilla, followed by a generous sprinkling of cheddar cheese, the baked hash browns (crushed), the sausage and pepper mixture, scrambled eggs, bits of bacon, and hot sauce.

10

Fold over the sides of the tortilla and roll it up tightly to form a burrito.

11

Wrap each burrito tightly in foil and place them in the freezer for later use, or preheat a large skillet with olive oil over medium heat and cook the burritos, turning every 2-3 minutes until golden brown and heated through.

12

Serve the burritos warm with salsa and sour cream on the side.
