1 medium red onion
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon cumin seeds
1 star anise
1 stick cinnamon
1 tablespoon ginger-garlic paste
2 green chilies
2 dried red chilies
1 teaspoon salt
2 tablespoons mustard oil
1 cup water
4 whole garlic pods

Slice red onions and transfer them to a deep bowl.

Crush the onions with your fingers.

Add red chili powder to the crushed onions.

Add turmeric powder to the mixture.

Add home-ground garam masala to the bowl.

Add cumin seeds to the mixture.

Add a couple of star anise and 2 sticks of cinnamon.

Add ginger-garlic paste and green chilies to the bowl.

Add salt and mix everything together.

Heat mustard oil in a pan until hot.

Carefully drop in the pieces of raw jackfruit and fry on high flame until golden brown.

Once the jackfruit is golden brown, add the onion mixture to the pan.

Add a cupful of water to the mixture to draw in the spices.

Transfer everything into a pressure cooker along with whole pods of garlic.

Stir well to ensure everything is mixed.

Cover the pressure cooker and cook for 3 whistles on medium flame.

Lower the flame and allow to cook undisturbed for 20 minutes.
