Clean the bell peppers by removing the membrane and keeping the stem.
Trim the zucchini and remove the seeds and watery flesh using a melon scooper or the back of a spoon.
Preheat the oven to 400°F (204°C).
Heat a skillet and add a little butter.
Sauté chopped onion and garlic until fragrant, about 1 minute.
Add leftover turkey stuffing or cooked turkey, bread crumbs, and a little tomato juice to the skillet and stir.
Turn off the heat once everything is mixed and looks good.
Add Canadian mozzarella cheese on top of the mixture.
Stuff the mixture into the hollowed-out bell peppers and zucchini.
Place stuffed veggies in the oven for 20 to 25 minutes or until ready.
