Marinate beef with 1 tablespoon soy sauce, 1 tablespoon shaoxing wine, 1/4 teaspoon white pepper, 1 tablespoon cornstarch, 1/2 teaspoon baking soda, and 1 tablespoon cooking oil. Let it sit in the fridge for 5-10 minutes.

Prep vegetables: Cut 60 grams of carrot into thin matchsticks, slice onion into 1/4 inch thick pieces, cut 2 baby bok choy into small pieces, and slice bell pepper into thin strips. Chop green onions and smash 4 cloves of garlic.

Cook egg noodles according to package instructions, rinse, and set aside.
