Cut 500 grams of flank steak into bite-sized pieces against the grain.
Marinate beef with 1 tablespoon soy sauce, 1 tablespoon shaoxing wine, 1/4 teaspoon white pepper, 1 tablespoon cornstarch, 1/2 teaspoon baking soda, and 1 tablespoon cooking oil. Let it sit in the fridge for 5-10 minutes.
Prep vegetables: Cut 60 grams of carrot into thin matchsticks, slice onion into 1/4 inch thick pieces, cut 2 baby bok choy into small pieces, and slice bell pepper into thin strips. Chop green onions and smash 4 cloves of garlic.
In a small container, mix 1/2 cup water, 1/2 tablespoon chicken bouillon powder, 2 tablespoons soy sauce, 1/2 tablespoon dark soy sauce, 2 tablespoons oyster sauce, 1 teaspoon sugar, 1 tablespoon shaoxing wine, 1/4 teaspoon white pepper, 1 tablespoon cornstarch, and a pinch of MSG.
Cook egg noodles according to package instructions, rinse, and set aside.
In a wok or pan, heat 1 tablespoon oil over high heat, add marinated beef, and cook for 2-3 minutes. Remove beef and set aside.
In the same wok, heat 2 tablespoons of oil over medium-high heat, add garlic and ginger, and sauté for 30 seconds.
Add carrot, onion, baby bok choy, bell pepper, and green onions, stir-fry for 1-2 minutes until softened.
Reduce heat to medium, add cooked noodles, and stir for 1 minute. Add beef back in and pour the sauce over.
Stir for 2-3 minutes until the sauce thickens. Turn off the heat and add 1 teaspoon toasted sesame oil, mixing well.
