Cut flank steak thinly against the grain, about an eighth of an inch, after freezing for 10 minutes to firm it up.
Peel ginger using a spoon to scrape off the skin.
Heat a wok or non-stick pan over medium-high heat and spray with non-stick spray.
Add the beef to the hot pan and cook for 60 to 90 seconds until browned, then flip and cook the other side for another 60 to 90 seconds.
Remove the cooked beef from the pan and set aside on a clean plate.
Combine the stir-fry sauce ingredients: 1 cup beef broth, 1/4 cup soy sauce, 1 teaspoon sesame oil, 1 tablespoon coconut sugar, 3 minced cloves of garlic, and 1 teaspoon grated ginger; stir and set aside.
Add 4 cups of broccoli heads to the wok, stir to scrape up bits from the beef, and then pour in the stir-fry sauce.
Cook the broccoli for about 4 minutes until crispy tender, stirring occasionally.
Mix 2 tablespoons of cornstarch with 2 tablespoons of water and add to the pan to thicken the sauce; bring to a boil.
Once thickened, return the beef to the pan, kill the heat, and stir until the beef is coated in the sauce.
Plate with 1/2 cup of cooked rice and top with chopped green onion.
