2 cups beef broth
1 cup red wine
4 tbsp butter
2 tbsp olive oil
2 sprigs rosemary
Salt & Black pepper
1kg potatoes (mix of Russets & Yukon Gold)
1/2 cup butter
1/2 cup sour cream
1/2 cup milk

Preheat the oven to 325°F.

Heat olive oil in a large Dutch oven over medium-high heat until shimmering.

Season lamb shanks with salt and black pepper, then sear in the hot oil until browned on all sides, about 8-10 minutes.

Remove the lamb shanks and set aside on a plate.

Add chopped onion, diced carrots, and minced garlic to the pot, cooking until softened, about 5 minutes.

Stir in tomato paste and tomato sauce, then pour in red wine, scraping up any browned bits from the bottom of the pot, and simmer for 5 minutes.
