1

Boil the potatoes until tender, then grate them using a grater.

2

In a blender, add mint leaves, ginger, green chilies, and cilantro; blend with 1/4 cup of water into a coarse paste.

3

Heat oil in a pan, then add cumin seeds and fennel seeds; roast the spices.

4

Add the mint and cilantro paste to the pan and roast for 2 minutes.

5

Add the grated potatoes, salt, red chili powder, chaat masala, and mango powder; mix well and cook for 10-15 minutes on medium heat.

6

Turn off the heat and let the filling cool down.

7

In a mixing bowl, combine all-purpose flour, a pinch of salt, baking soda, and oil; mix well.

8

Gradually add water to form a hard dough, not soft; let it rest for 10 minutes.

9

Prepare the dates and tamarind chutney by soaking dates and tamarind in warm water for 1 hour, then blend into a smooth paste.

10

Transfer the paste to a pot, add salt and red chili powder, and cook for 7-10 minutes until boiling.

11

Make a cornstarch slurry by mixing cornstarch with water; keep aside.

12

Divide the rested dough into 6 balls; roll one ball into a circle about 9 inches in diameter, then cut into a rectangular shape.

13

Take one piece, roll it thin, and place 1.5 teaspoons of filling on the wide side; roll it up while pressing the filling inside.

14

Dip the open part in the cornstarch slurry and place in hot oil for frying.

15

Fry for 4 minutes on medium-low heat, then flip and fry the other side for another 4 minutes.

16

Remove from oil and let them cool to achieve a crispy texture.
