Add 1/2 cup of milk, 3 eggs, 2 tablespoons of brown sugar, 1/4 teaspoon of cinnamon, 1/4 teaspoon of pumpkin pie spice, 1/4 teaspoon of salt, and 1/3 cup of pumpkin puree into a shallow baking dish.
Whisk the ingredients together until well combined.
Preheat a non-stick griddle and spray it with nonstick cooking spray, then add a little butter.
Dip each slice of brioche bread into the egg mixture, soaking for about 10 to 15 seconds on each side.
Place the soaked bread onto the griddle and cook until golden brown on one side, then flip it over with a spatula.
Cook the other side for about 90 seconds to 2 minutes until golden brown, checking for bubbling butter.
While the French toast is cooking, prepare the whipped cream by using a cold bowl to mix 1 1/2 cups of heavy cream and 1/4 cup of powdered sugar until soft peaks form, then add a splash of vanilla extract.
For the buttermilk syrup, combine butter, buttermilk, and corn syrup in a cold pan, then heat until the butter melts and the mixture comes to a rapid boil.
Once boiling, add baking soda and continue to boil for about 8 minutes until it turns from light creamy to a golden color.
Serve the pumpkin French toast topped with butter, a dollop of whipped cream, and a drizzle of buttermilk syrup.
