Using a fish fillet today, you can also use mahi mahi, snappers, halibut, salmon, or tilapia.

Gently pat the fish dry on both sides and season both sides with salt and white pepper powder.

Let the fish season for about 15 minutes.

Prepare four thin slices of ginger and cut four more thin slices into fine strips.

Prepare four green onions. Cut the stem part into 2-inch sections diagonally, and cut the leafy part into strips.

Mix some cornstarch with cold water and stir until all the cornstarch dissolves for the sauce.

After 15 minutes, sprinkle cornstarch on the fish and spread it evenly.

Add some oil to a hot pan over medium-high heat.

When the oil is hot, add the ginger slices and the stem part of the green onion to the pan. Let it sizzle for about 15 seconds.

Put the fish fillet in the pan and pan fry for 4 minutes on each side, trying not to move the fish.

Swirl the pan occasionally so oil gets to all the fish and stir the ginger and green onion occasionally to prevent burning.

After 4 minutes on the first side, gently flip the fish to pan fry the other side.

Keep an eye on the ginger and green onion and remove them before they get too brown, draining out as much oil as possible.

To make the sauce, add some oil to a hot pan over medium heat.

When the oil is hot, add the fine ginger strips and let them sizzle for about 10 seconds.

Turn off the heat and add the green onion strips, tossing them in the oil a few times before removing them from the pan to place over the fish.

Turn the heat back on low and add soy sauce and a touch of sugar to the pan, mixing with the oil and bringing it to a boil.

Once boiling, add white pepper powder and the cornstarch and water mixture, stirring and bringing it to a boil again.

Once the sauce is back to a boil, add a touch of sesame oil and the sauce is done.

Pour some sauce around the fish and serve with rice on the side.
