The dish combines the richness of salmon with the freshness of tomatoes and spinach, often enjoyed with a glass of white wine. Today, it has become a popular choice in Italian restaurants worldwide, showcasing the versatility of Tuscan cuisine.

Chicken broth keeps moisture without alcohol.
Pour 3 tablespoons of olive oil into a skillet and heat it up.
Add 3 salmon fillets to the skillet, one for each person, and sear for a couple of minutes on each side.
Remove the salmon from the skillet and set aside.
Finely chop 1 onion and add it to the skillet.
Add 1 clove of minced garlic to the oil in the skillet and cook briefly over low heat until it starts to brown.
Add the chopped onion along with some salt and cook until tender over medium heat.
Cut 150 g of cherry tomatoes in half and add them to the skillet after the onion is cooked.
Sauté the tomatoes for a couple of minutes.
Pour in 200 ml of cooking cream and 125 ml of vegetable broth, mixing well.
Add black pepper to taste and wait for the sauce to start boiling.
Incorporate 70 g of fresh spinach and mix for a few seconds until wilted.
Cover the skillet and let the spinach cook until tender.
Add 35 g of grated parmesan cheese to the sauce and mix well.
Return the salmon fillets to the skillet and cover again, cooking for another 3 minutes.
