Soybean dal is a nutritious dish popular in various regions of India, often enjoyed with rice or flatbreads.
Ingredients
- ●1 cup split yellow soybeans
- ●4 cups water
- ●1 medium onion, chopped
- ●2 tomatoes, chopped
- ●2 green chilies, slit
- ●1 tsp ginger-garlic paste
- ●1/2 tsp turmeric powder
- ●1 tsp cumin seeds
- ●1 tsp mustard seeds
- ●2 tbsp oil
- ●Salt to taste
- ●Fresh coriander leaves for garnish
Instructions
- 1Rinse the split yellow soybeans under cold water until the water runs clear.
- 2In a large pot, add the rinsed soybeans and 4 cups of water. Bring to a boil, then reduce heat and simmer until the soybeans are tender, about 30-40 minutes.
- 3In a separate pan, heat the oil over medium heat. Add the cumin and mustard seeds, and let them splutter.
- 4Add the chopped onions and sauté until they are golden brown.
- 5Stir in the ginger-garlic paste and green chilies, and cook for another 2 minutes until fragrant.
- 6Add the chopped tomatoes and turmeric powder, and cook until the tomatoes are soft and mushy.
- 7Once the soybeans are cooked, drain any excess water and add them to the onion-tomato mixture.
- 8Mix well and add salt to taste. Cook for an additional 5-10 minutes to allow the flavors to meld together.
- 9Garnish with fresh coriander leaves before serving.

- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●2 tbsp chopped fresh cilantro
- ●1 tbsp lemon juice
- ●Oil for frying

- 1In a mixing bowl, mash the cooked soybeans until smooth.
- 2Add breadcrumbs, chopped onion, minced garlic, and all the spices (cumin, coriander, garam masala, red chili powder, turmeric, salt, and black pepper) to the mashed soybeans.
- 3Mix in the chopped cilantro and lemon juice until well combined.
- 4Form the mixture into small patties or kebabs.
- 5Heat oil in a pan over medium heat for frying.
- 6Carefully place the kebabs in the hot oil and fry until golden brown on both sides, about 3-4 minutes per side.
- 7Remove the kebabs and drain on paper towels to remove excess oil.
- 8Serve hot with mint chutney or yogurt dip.

- ●1 medium onion, finely chopped
- ●2 cloves garlic, minced
- ●1 tsp ginger paste
- ●1 tsp cumin powder
- ●1 tsp coriander powder
- ●1/2 tsp red chili powder
- ●1/2 tsp garam masala
- ●Salt to taste
- ●1/4 cup fresh cilantro, chopped
- ●4 large flatbreads or naan
- ●1/2 cup yogurt
- ●1/2 cucumber, sliced
- ●1 tomato, sliced
- ●1/2 onion, sliced
- ●Lemon wedges for serving
Instructions
- 1In a large bowl, combine minced meat, chopped onion, garlic, ginger paste, cumin powder, coriander powder, red chili powder, garam masala, salt, and chopped cilantro. Mix well until all ingredients are combined.
- 2Cover the mixture and let it marinate in the refrigerator for at least 30 minutes to enhance the flavors.
- 3Preheat your grill or pan over medium-high heat.
- 4Shape the marinated meat mixture into long kebabs, about the size of your flatbread.
- 5Grill the kebabs for about 10-15 minutes, turning occasionally, until they are cooked through and have a nice char.
- 6While the kebabs are cooking, prepare the flatbreads by warming them on a skillet or grill for a few seconds on each side.
- 7Once the kebabs are done, place them on the warmed flatbreads.
- 8Top the kebabs with yogurt, sliced cucumber, tomato, and onion.
- 9Roll the flatbreads tightly around the kebabs, securing them with a toothpick if necessary.
- 10Serve the kabab rolls with lemon wedges on the side.
