Soybean dal is a nutritious dish popular in various regions of India, often enjoyed with rice or flatbreads.

Ingredients

  • 1 cup split yellow soybeans
  • 4 cups water
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. 1Rinse the split yellow soybeans under cold water until the water runs clear.
  2. 2In a large pot, add the rinsed soybeans and 4 cups of water. Bring to a boil, then reduce heat and simmer until the soybeans are tender, about 30-40 minutes.
  3. 3In a separate pan, heat the oil over medium heat. Add the cumin and mustard seeds, and let them splutter.
  4. 4Add the chopped onions and sauté until they are golden brown.
  5. 5Stir in the ginger-garlic paste and green chilies, and cook for another 2 minutes until fragrant.
  6. 6Add the chopped tomatoes and turmeric powder, and cook until the tomatoes are soft and mushy.
  7. 7Once the soybeans are cooked, drain any excess water and add them to the onion-tomato mixture.
  8. 8Mix well and add salt to taste. Cook for an additional 5-10 minutes to allow the flavors to meld together.
  9. 9Garnish with fresh coriander leaves before serving.

  3. 3Mix in the chopped cilantro and lemon juice until well combined.
  4. 4Form the mixture into small patties or kebabs.
  5. 5Heat oil in a pan over medium heat for frying.
  6. 6Carefully place the kebabs in the hot oil and fry until golden brown on both sides, about 3-4 minutes per side.
  7. 7Remove the kebabs and drain on paper towels to remove excess oil.
