2 teaspoons ginger-garlic paste
1 teaspoon turmeric powder
1 tbsp garam masala powder
2 tablespoons oil
2 teaspoons mustard seeds
2 teaspoons cumin seeds
salt to taste
water (about 1/2 cup)

asafoetida (hing)

Wash the green chilies nicely and slit them or chop them to take out the seeds.

Roast 1 cup of peanuts in a little oil until they are slightly golden.

Add half grated coconut, 1/4 cup sesame seeds, and 1 tbsp pumpkin seeds to the peanuts and roast together on low flame to prevent burning.

Add 1 chopped onion to the roasting mixture and continue to roast until everything is well combined and slightly golden.

Once cooled, grind the roasted mixture along with the soaked tamarind and 2 teaspoons of ginger-garlic paste into a not very fine paste.

In a pan, heat 2 tablespoons of oil and add 2 teaspoons of mustard seeds and 2 teaspoons of cumin seeds; fry until they start to splutter.

Add curry leaves and a pinch of asafoetida (hing) to the oil and sauté briefly.

Add the ground masala paste to the pan and mix well.

Add salt to taste and about 1/2 cup of water to adjust the consistency of the curry.

Simmer the mixture for a few minutes until heated through and flavors meld.
