Melt 400 grams of sugar in 400 ml of water at low heat to prepare the syrup.

Increase heat to bring to a boil and thicken into syrup, then turn off and allow to cool.

Break 3 eggs into a medium-sized bowl and add 125 grams of sugar, whisk until blended.

Melt 100 grams of coconut oil in the microwave for one minute and add to the bowl, whisk until blended.

Crush 130 grams of digestive biscuits and add to the mixture.

Add 70 grams of desiccated coconut, 1 pack of baking powder, and 1 pack of vanilla powder, mix with a wooden spoon.

Coarsely crush 140 grams of walnuts and add to the mixture, continue mixing until thoroughly blended.

Grease a baking dish with butter and transfer the cake mixture into the dish, spreading it evenly.

Bake in the oven at gas mark 3 for about 25 minutes or until golden brown.

Prepare the topping by pouring 150 ml of milk into a medium-sized pan, adding 2 tablespoons of corn flour, 1 tablespoon of flour, 125 ml sugar, and 1 packet of vanilla powder, and mix into a smooth paste.

Transfer the pan to the hob and whisk on medium heat until thickened to a custard-like texture, then take off the heat and cover to cool.

Check the cake with a toothpick to see if it's ready, then remove it from the oven.

Make holes on the surface of the cake to allow the syrup to be absorbed more easily.

Spoon the cooled syrup over the cake evenly and allow it to absorb.
