Traditionally enjoyed as a street food or at family gatherings, Lo Mein has evolved globally, with numerous adaptations featuring local ingredients and flavors.

Introduce the dish and ingredients.
Use yellow wheat flour noodles, available in Chinatown.
Prepare a marinade with 3 tablespoons soy sauce, 2 tablespoons oyster sauce, 2 tablespoons hoisin sauce, 1 tablespoon toasted sesame oil, and 1/4 teaspoon five spice powder; whisk together.
Slice 1 pound of country style boneless pork ribs into 1/8 inch thick pieces and marinate in a Ziploc bag with 3 tablespoons of the marinade.
Add 1/4 teaspoon of liquid smoke to the marinade; let marinate for at least 15 minutes, but no more than an hour.
Prepare the sauce by mixing 1/2 cup chicken broth and 1 teaspoon corn starch; let it hang out.
Minced 2 cloves of garlic and grated 2 teaspoons of ginger; mix with 1/2 teaspoon vegetable oil.
Prep vegetables: clean and slice fresh shiitake mushrooms, cut scallions into 1 inch pieces, and slice napa cabbage into half inch strips after removing the core.
Heat a wok over high heat and add 1 teaspoon of vegetable oil; cook the marinated pork in two batches for 2-3 minutes until seared and colored.
Add 2 tablespoons of shaoxing wine to the cooked pork and stir for 30 seconds before removing it from the wok.
Wipe the wok clean and add another teaspoon of vegetable oil; cook shiitake mushrooms and scallions until tender, then add napa cabbage and stir-fry until wilted.
Add the cooked pork back into the wok along with the prepared sauce; stir to combine and heat through.
