Matar ka Nimona

Ghee - 2 - 3 tbsp
Fresh Peas (Matar) - 1 cup
Chopped Potato (Aloo) - 1 cup
Tomato puree - 2 tsp
Green chilli paste - 1 tsp
Ginger paste - 1 tsp
Chopped coriander leaves - 2 tbsp
Water - 1 cup
Bay leaf (tej Patta) - 1-2
Dry Red chilli - 1
Clove - 4-5
Cumin Seeds (Jeera) - 1/2 tsp
Kashmiri Red chilli powder- 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Pinch of Asafoetida

In a blender, coarsely grind washed fresh green peas with little water.

In a hot pan add 2-3 tbsp clarified butter/ Ghee and fry 1 cup of potato cubes on medium flame till it becomes golden brown.

When potatoes are cooked, remove them on a plate and keep aside.

In the same pan add 1-2 bay leaves, 1 dry red chilli, 4-5 cloves, and ½ tsp cumin seeds. Let the spices crackle and release the flavor.

Then add ½ tsp of Kashmiri Red chilli powder, ½ tsp of coriander powder, ¼ tsp of turmeric powder, and a pinch of Asafoetida and mix it all together.

Add 1 tsp ginger paste, 1 tsp green chilli paste, and 2 tsp Tomato puree and sauté it for a minute or till the paste becomes lumpy.

Add coarsely crushed peas to the paste, mix it well. Add 1 cup of water, salt as per your taste, and give a boil.

After a boil, add fried potatoes, mix it well and cook for a minute.

Add 2 tbsp chopped coriander leaves. Mix it all together.

Matar ka Nimona is ready, garnish with butter and coriander leaves. Serve the Nimona with chapatis/rotis or rice.
