Soak the cedar plank in water for about 30 minutes to 1 hour.
Trim the salmon fillet to fit the cedar plank, removing undesirable parts.
Preheat the oven to 325°F.
Skin the salmon fillet by making a small incision at the end and carefully pulling the skin away with a sharp knife.
In a mixing bowl, combine plenty of fresh dill, fresh parsley, finely chopped garlic, and finely chopped capers.
Add lemon zest and a little olive oil to the mixture, then season with coarse salt and black pepper.
Take the soaked cedar plank out, dry it off, and season it with olive oil, salt, pepper, oregano, and sumac.
Place the salmon fillet on the cedar plank and season it with the prepared mixture.
Put the cedar plank with the salmon in the preheated oven and cook for about 45 minutes, aiming for an internal temperature of 125°F before resting.
Remove the salmon from the oven and let it rest for 10 minutes before serving.
