These flavorful skewers showcase the rich tradition of grilling meats, with spices that reflect the region's culinary heritage. Today, Kafta has gained global popularity, with variations found in many cultures, adapting to local tastes while maintaining its essence.

Greek yogurt is healthier but sour cream is a cheaper alternative.
Chop 3 large potatoes into pieces.
Heat oil in a pan and fry the potatoes until cooked well.
Chop 2 large tomatoes into circles.
Chop 1 large onion into circles.
Optionally, add chili or peppers (red, yellow, or green) to the dish.
In a casserole, dip hands in water to help form kafta patties.
Shape the kafta into circular patties, not too thin or thick, and place them in the casserole.
Once the potatoes are fried, layer them on top of the kafta in the casserole.
Add chopped peppers on top of the potatoes, followed by the chopped tomatoes and onions.
Prepare the sauce by adding 2 chicken stock cubes to 500 milliliters of hot water and mix well.
Add half a teaspoon of black pepper, 1 teaspoon of seven spices, and salt if needed to the sauce.
Stir in 3 tablespoons of tomato paste into the sauce and mix well.
Pour the sauce over the layered ingredients in the casserole and add any remaining water.
Preheat the oven to 300 degrees Celsius.
Bake the casserole for half an hour until the kafta is cooked and the dish looks ready.
Serve the baked kafta with rice (Lebanese rice with vermicelli or basmati) and vegetables like spring onion, cucumber, pickles, or green pepper.
