Season the pork with sour orange, salt, black pepper, garlic paste, celery, red onion, bell pepper, and fresh coriander. Cover and refrigerate for at least five hours or overnight.

Heat 3 tablespoons of olive oil and 1 teaspoon of sugar in a large pot until the sugar begins to brown.

Add the marinated pork to the pot and brown it evenly, stirring every 2 minutes for about 45 minutes.

Add 1.5 tablespoons of tomato paste and cook for another minute to brown it with the meat.

Pour in 4.5 cups of pre-heated water, add 10 olives, and seasoning powder. Stir well and bring to a boil.

Once boiling, taste and adjust salt if necessary. Add 3 cups of washed and drained rice, stir, and lower the heat to medium. Cover and cook for about 3 minutes.

Check the rice after 3 minutes, then cover and cook for an additional 3 minutes until the water has evaporated.

Seal the pot with aluminum foil and cook on minimum heat for 20 minutes to create a crust at the bottom.

After 20 minutes, uncover and let it sit for a few minutes before serving.
