Heat oil in a pan over medium heat until shimmering
Add mustard seeds and fenugreek seeds; cook until they start to crackle
Stir in curry leaves and asafoetida; sauté for 30 seconds
Add chopped raw mango and sauté for 2-3 minutes
Sprinkle turmeric powder, red chili powder, and salt; mix well
Pour in water and bring to a boil
Reduce heat and simmer until mango is tender, about 10-15 minutes
Stir in jaggery and vinegar; cook until jaggery dissolves
Adjust seasoning if needed; let cool slightly
Serve warm or at room temperature
