Mofongo is often served with a variety of meats or seafood, making it a versatile staple in Dominican households. Prepare a thick broth by combining 2 cups of chicken broth, 8 slightly crushed garlic cloves, 1 pinch of salt, 1 pinch of pepper, a bunch of wide cilantro, 3 celery sticks, and 1/2 onion in a pot.

Heat the broth and let it thicken, then turn it off and cover it.

Peel 2 large green plantains and cut them into small rounds.

Heat enough oil in a frying pan to cover the plantains over medium heat.

Fry the plantains until cooked and golden, then remove from heat and drain.

In a traditional Dominican pilón, crush the garlic with the plantains and some of the crushed pork rinds, adding hot chicken broth to achieve a creamy texture.
